I’ve been wanting to make these cookies all summer, but it’s been just too hot in our house to turn on the oven. Taking advantage of a slightly overcast day, we got right to work making these delicious, packed with nutrients, Planet Organic Cosmic Cookies. They have been a favorite of mine ever since a friend introduced them to me several years ago while on a winter get-a-way to Canmore for some cross-country skiing.
These cookies are sold at the Planet Organic market and at one time they had this recipe online. Unfortunately I could no longer find the recipe there but Food.com still has it. So if you haven’t tried them yet, here is the recipe bellow. Despite the long list of ingredients, these cookies are well worth the effort! Great cookies to take hiking, as a post-workout snack or just to enjoy with a cold glass of milk.
- 2 1/4 cups quick oats
- 2 cups spelt flour (regular works fine too)
- 1 cup sunflower seeds
- 3/4 cup pumpkin seeds
- 1/2 cup shredded coconut, unsweetened
- 1/4 cup flax seed
- 1 cup granulated unbleached cane sugar
- 1 tablespoon cinnamon
- 2 1/4 teaspoons sea salt
- 1 3/4 cups dark chocolate chips or 1 3/4 cups carob chips
- 1 1/4 cups raisins
- 1/4 cup water
- 1/4 cup blackstrap molasses
- 3/4 cup canola oil
- 1 cup soymilk (or milk)
Preheat oven to 350°F.
Line two baking trays with parchment paper.
Combine dry ingredients : from oats to raisins.
Combine wet ingredients: from water to soy milk.
Stir dry and wet together until just combined.
Portion cookie dough using 1/3 cup measure and place on baking tray.
Gently flatten cookies.
Bake for 20-24 minutes or until lightly browned.
